I don't know about you, but as we get deeper into the winter days, I often start thinking about spring days. My thoughts are filled with birds chirping in the morning, the warm breeze blowing around me, the bright sun shining overhead, and of course all of the newly blooming flowers. That's why I love this salad! It is such a wonderful representation of spring and all its beauty! Growing flowers on my family's farm is my full-time job. Even during the winter months, I am still working to plant early spring bulbs, tend to crops I am overwintering, start new seeds for the upcoming year, etc. I am also daydreaming about last year's blooms and imagining all the beauty the new plantings will bring. During this season, I enjoy potting new plants that I grow in my kitchen window to get me through the coldest days when I miss my blooms the most.
